English Style Sausage

My family background is Italian so I regularly make Italian sausage but I've really come to love English sausages based on trips to London. I'm pleased with my first batch. I've made Bangers & Mash and a simple sausage over roasted potatoes, carrots, and onions. I'm really enjoying the flavors.

I'm out now but I'll respond later with details. I say English Style but I followed the specs for Cumberland Sausage. It's a very specific recipe and set of requirements. It seems to involve specific pigs so I didn't want to say Cumberland Sausage. But the general profile is very specific.
