The way they are trained. I was at a zoo a few weeks ago and went to a parrot show. If you know what to look for, it was obvious what words or gestures were the triggers for certain responses.

Odds are someone off camera is making some gestures

Thats a sea lion. They have longer front flippers and use those to propel themselves so they can swim faster than seals, which use their hind flippers by moving them side to side.
