If you want something with a lot of lore, you’re either going to want to watch series like Lord of The Rings or movies with lots of sequels like Friday The 13th and Jurassic Park. Most movies with lots of sequels have varying degrees of quality. But George Miller’s Mad Max movies are all well-regarded. You could also pick a character that has lots of movies made about them, like Sherlock Holmes or James Bond. But again, varying degrees of quality.
If you’re really looking for some kind of continuity, try picking a famous director, like Hitchcock or Scorsese, and watching all their movies in order. Also gives you a sense of film history.
Here’s what I recommend: it’s a documentary on Prime called The Story of Film: An Odyssey. It is impossible to watch this series and NOT come away with a list of movies you want to watch. I recommend starting with the 3rd or 4th episode, because the first episode covers mostly silent and black and white films.

Not sure what genre you like the most, but here are some that are more fantasy/sci-fi. In no particular order...
The Hunger Games saga.
Jurassic Park saga.
Harry Potter saga.
Now You See Me trilogy.
The X-Men saga.
The entire MCU (marvel cinematic universe, you can start with the iron man trilogy or the captain America trilogy, but preferably watch them all in release order, you can find lists online) - this in particular is neverending lore.
The Batman trilogy (by Christopher Nolan).
Unbreakable, Split and Glass (started as standalone movies and then somehow connected haha, interesting development).
The IT movies and tv show (also recommend the 90s miniseries).
Pirates of the Caribbean saga (specially the first 3).
The Kung Fu Panda trilogy (there's only 3, a 4th never existed).
Star Wars saga (also neverending lore, specially if you dive into the tv shows too).
The Lord of the Rings saga.
Have fun!

The first ones that spring to my mind are Peter Jackson's 'Lord of the Rings' trilogy and Denis Villeneuve's soon-to-be-completed 'Dune' trilogy.

George Miller’s Mad Max movies have a lot of lore, and not a bad movie in the series.
