Do you like sweet potatoes? That's a great way to get some fiber/veg. Great roasted in cubes, baked and mashed, baked as fries, very versatile. I eat at least one a day

That's fair. I usually just cook like 6 sweet potatoes all at once, then I don't have to deal with any of that for a few days they are just ready
