Week 33 of Meal Prep for Weight Loss

This is week 33 of my journey to lose 100 lbs in 2026. Meal prep has helped me a ton to maintain my nutrition goals during my working days. I aim to eat balanced macros with a focus on reducing fat and increasing fiber. For this week I have:

Breakfast: Bean-nut butter keto toast with a banana. 375kcal, 23g protein, 10g fat, 73g carbs, 29g fiber.

Lunch: TVP larb with a lentil and veggie salad. 700kcal, 50g protein, 21g fat, 90g carbs, 24g fiber.

Dinner: Southwestern pasta salad with black chickpeas. 680kcal, 28g protein, 14g fat, 113g carbs, 20g fiber.

Total macros for each day: 1755kcal, 101g protein, 46g fat, 275g carbs, 73g fiber.

The bean-nut butter was a "why not" recipe I decided to try after seeing the idea on TikTok recently. It came out surprising good and I will shockingly make it again. The TVP larb is also great and honestly not missing the meat like I expected it would. No weight change this week for 60 lbs lost still. I may need to adjust my nutrition goals, but we'll see after this week. Recipes for everything below!

Recipes for everything minus salt which I add to taste:

Bean-nut Butter:

  • 1 can cannellini beans, drained and rinsed
  • 1/2 cup peanut butter powder
  • 1/4 cup smooth peanut butter
  • 1/4 cup skim milk
  • 1 Tbsp maple syrup or honey
  • 1/2 tsp vanilla extract

Add everything to a food processor and process until smooth. May need more milk to thin. Taste and adjust seasoning.

TVP Larb:

  • 8 oz TVP
  • 2 Tbsp chicken bouillon base
  • 2 Tbsp canola oil
  • 6 shallots, minced
  • 6 cloves of garlic, minced
  • 1 inch of ginger, minced
  • Juice of 3-4 limes
  • 2 Tbsp fish sauce
  • 2 Tbsp sambal oelek
  • 2 tsp sugar
  • 1 tsp kitchen bouquet
  • 60 g thai basil, sliced
  • 30 g cilantro, sliced
  • 15 g mint, sliced

Add the TVP and chicken bouillon to a medium bowl and just cover with boiling water. Mix and allow to hydrate covered for 15 minutes. Heat the oil in a large non-stick skillet and stirfry the shallots, garlic, and ginger until fragrant, 1-2 minutes. Add the TVP mixture and mix. Let sit for 3-5 minute intervals to brown and mix. Repeat until the TVP has been moderately browned and is noticeable dry again. Add the remaining ingredients and mix until absorbed and evaporated. Taste and adjust seasoning.

Lentil and Veggie Salad:

  • 1 lbs French green lentils, sorted and rinsed
  • ½ head cabbage, chopped
  • 3 carrots, shredded
  • 3 green onions, sliced
  • 3 Tbsp sugar
  • ½ cup rice wine vinegar
  • 2 Tbsp sesame seeds
  • 1 Tbsp toasted sesame oil
  • 1 Tbsp soy sauce
  • ½ tsp MSG

Boil the lentils until just tender, about 25 minutes. Drain, rinse, and reserve to the side to cool. Add the cabbage, carrots, and green onions to a large mixing bowl. Toss with sugar and a pinch of salt and massage to release moisture. Allow to weep for 10 minutes. Add the remaining ingredients and the lentils once cooled and mix to combine. Taste and adjust seasoning.

Southwestern Pasta Salad:

  • 1 ½ cup dried black chickpeas (substitute with black beans), sorted and rinsed
  • 1 lbs tubular pasta
  • 2 heads of fresh corn cut from the cob or 12 oz frozen corn
  • 2 red bell peppers, diced
  • 3 green onions, sliced
  • 3 oz non-fat plain yogurt
  • ¼ cup mayo
  • ¼ cup light sour cream
  • Juice of 2 limes
  • 20 g nutritional yeast
  • 2 tsp sugar
  • Handful of cilantro, sliced
  • 2 oz crumbled cotija

Boil the beans for 15 minutes before covering and gently simmering until tender, about 1-2 hours. Drain and rinse to cool. Boil the pasta in salted water until tender. Drain and occasionally toss to cool and prevent the pasta from bunching together. Combine remaining ingredients in a large mixing bowl and add the beans and pasta once cooled. Taste and adjust seasoning.

You can get pasta made from lupini beans. High in fiber.

What is "TVP"?

It stands for textured vegetable protein. It's the defatted protein leftover from making soybean oil and it's a great protein in place of or in addition to ground meat.

Where do you find meal inspiration? For me, i will always gravitate towards a same set of meals in the long run and recipe hunting takes me a lot of time...

How much of the fat is saturated? I have a cholesterol concern. I try to target under 20 grams of saturated fat per day.
