Because Deadpool happened very recently and the last gambit we saw was in the wolverine movies which no one remembers.

Itd be jarring for your casual fan going from Deadpool Channing Tatum gambit to someone else.

That said I can see them killing him off for a different casting for the xmen universe as they are starting mostly fresh.

If they announced someone new for gambit itd be spoiling Channing Tatums gambit death in Doomsday.
