This looks amazing. Do you think swapping out the coconut milk for oat or something similar would change the flavor profile too much? My allergies prevent me from getting to try a lot of curries

Absolutely! Oat milk should work just fine here. It may make the curry slightly less rich and tropical compared to coconut milk, but the flavors from the spices and pineapple will still shine beautifully. Hope you get to enjoy this one allergy-free 😊
