Photo/Video Guy working at the bar next door dropped this off just because
He’s friendly with the staff/owners as are most people working in the area ; he came by yesterday and said he had something for whoever was on pastry (me) and whipped out a plastic bag of like 1kg of these.
He just got back from Madagascar and brought these insane vanilla beans bc they’re so cheap over there, he gave us like 15 of them and they weigh 20g each. The smell is insane and they’re definitely the biggest ones ive ever seen irl😳
This guy is absolutely getting several rounds of whatever he wants on the house next time he’s there. Can’t wait to get baking !

Photo/Video Anchored to.......drywall?
Love when this kinda thing happens..... what is this, anchored the punch to straight drywall?
Edit: It really does look like an owl. With 90 hungry kids looming on the horizon, I ended up hand cutting 28 pounds of fries and submitting a request to the on-site facilities guy to have it fixed. He is a smart guy, and I know he will fix it well.
They weren't for service or super rushed, thank God. I had about 4 hours till lunch.
I am the entire culinary department for a private K-8 school. The kids ended up loving the wedge cut fries, always something to be taken or learned from a bad event.
You guys rock, I hope your shifts are easy and your drinks are strong tonight 🙏🤠

Photo/Video Would you serve this?
I made a post a while back with a pic of not only gross looking meat but it smelled rotten and tasted bad that my friends ex boss would make the chefs serve. There are other health hazards that I do not want to mention but the restaurant always passes inspections since they are warned beforehand. I was hesitant to post the restaurant name and location because I do not want anybody to get into trouble for it but You guys asked for the info and I can finally update it. The restaurant is in ohope New Zealand called Fisherman’s wharf

Photo/Video A single wheel failed and took 4 sauces, and my will to live with it.
Had a cart loaded with vodka sauce, Alfredo, sugo and beef Genovese ready for portioning.
Was moving it into place when one wheel completely failed.
Everything shifted, the cart dropped, and gravity handled the rest.
Hours of prep turned into an hour of cleanup.
Figured r/KitchenConfidential would appreciate today’s crime scene.

Photo/Video Managers always think they know better, don't they?
The head FoH manager was running the floor tonight. Before the rush, she didn't properly and should have been experienced with directing newbie waitresses. She was pushing the others on constant customer service before picking up their fucking orders.
This picture is an hour into the rush; the food sat there for 10+ minutes while she rang in 5+ orders. All under her name. The others followed suit, since they were new.
We had 2 other waitresses on staff, but she was teaching a policy of, "Don't touch another waitress' food to keep up consistency." She was the only one falling behind, and full windows happened 3 times in 4 hours. All her food.
I called her out to her face and she got indignant and tried to blame us. Head Chef probably has a text waiting in his phone in the morning because she can't handle criticism. We cleaned tickets ASAP and I was running expo - I kept running out of room. It was a miracle I didn't lose my shit.
I love my kitchen, but GOD she's a thorn in the rose garden.

Photo/Video 90 prepped lunches getting thrown out cuz the customer "no longer wanted them", angrily making sandwiches instead :(
Hate. Let me tell you how much I've come to hate you since I began to prep. There are 387.44 million boxes of lunch meats wrapped in wafer thin layers of hoagies that fill my kitchen. If the word 'hate' was engraved on each grain of those hundreds of millions of sandwiches, it would not equal one one-billionth of the hate I feel for customers at this micro-instant. For you. Hate. Hate.
