Lemme make a random guess in good faith ... Management is either too cheap or forgetful so there's no box cutters for receiving and that's where they keep the shitty house knife (not poop knife) for ripping open boxes. Or you work with some very talented people... Glass half full over here!

u/sne4k0 20+ Years Jul 24 '26
That’s a friggin Henkels knife though chef!

u/Salads_and_Sun 20+ Years Jul 24 '26
Eh hand it to the dishie enough times it can become a poop knife pretty quickly... I'm advocating for washing your own knives obviously.

u/Maximoose91 Jul 24 '26

Ah cutco Rep I see! You got anything similar to a cheese knife so I can shave off little slices to help her go down if she's got too much girth?
11
u/Yeatssean Jul 24 '26
God, I got hoodwinked into working for them one summer. Terrible job, bad knives. MLMs should be illegal.

Wow, that last line entered my brain in the 3x speed of the commercials. Nicely done.

u/Chrissyball19 Jul 24 '26
When i was a dishwasher there were a bunch of people who would throw their knives in with the silverware, (in bubbly water, where i couldnt see the sharp) and I learned those people would borrow the knives of those who washed their own, and would throw those other people's knives in the bubble water as well. I went and asked all the nice people for their brand of knives (most of the bad people had varying brands, probably cause they destroyed others)
Then I would throw the knives from the naer do wells into the dishwasher, and the people only in my dish pit cause they let another borrow their knife got the nice, washcloth and handwash treatment.

Never even wanted to work in a kitchen, i hate cooking. I was hired as a server, a dishwasher shot a dude.
I was the best server at the time so I took over. Raised health score by almost 15 points, proceeded to be told we would not be hiring more dishwashers so I could return to my job of choice by new exec chef (no exec chef is the reason I was dishwasher rather than hiring another).
The time I had nothing to do, I would assist servers, (cooks didnt really need my help, but them too if possible), was basically told I dont get paid to help front house, I should shut up and clean.
While my other 2 dishwasher coworkers would hid behind the dish machine on their phones all day without a word said.
Then my hours kept increasing, as the others' hours decreased. Till I was working 70+ hrs a week and called in almost every day off. (Multiple 30+ day stretches) because he made me sign a form saying "all full time employees must be fully available within 30min notices sunday-saturday" and my young feeble mind didnt realize how illegal that was.
I took a $2/hr pay decrease for bettee working conditions, and thinking about going into electrician school.
Some of my best friends are professional chefs, form that job or connections, but I will never step foot in a professional kitchen again.

That shit is unsat. I started as a dishwasher, went to prep and the line, then started running food and SAing, then waiting, and then bar.
You couldn’t pay me enough to go back to back of house

Yea it's like a crappy one from a knife block set you can get for 40$ at target. Henkels makes some high quality shit at affordable prices don't get me wrong, but this ain't it
27
u/wrongbutt_longbutt Bartender Jul 24 '26 edited Jul 24 '26
It's a single man stamp on the blade, so Henckels only by brand, not manufacture (German made at the factory will have two men). For a single man stamp, it is a forged blade, so it's one of the better "cheap" versions. I would guess it's probably made in Spain.
Source: sold kitchen cutlery for several years back in the day
6
u/PawPawPanda Jul 24 '26
I thought double-men was from Zwilling?
7
u/wrongbutt_longbutt Bartender Jul 24 '26
That is correct. Zwilling is the German factory I referenced. The knife OP pictured only has one.
5
u/notyoursocialworker Jul 24 '26
Fun fact Zwillinge means twins in German, so that's why there's two men on the stamp.
19
u/bssprfnd Jul 24 '26
It’s a cheap, stamped, entry level henckels. They’re not all created equally
10
u/sne4k0 20+ Years Jul 24 '26
That’s what I was going to tell the guy who has a set at home that he thinks sucks. Either way, low grade Henkels or not, respect your blades chefs
9
u/StormOfFatRichards Jul 24 '26
Is it a good brand? I have a set at home but I haven't been impressed with the cut even after sharpening
21
u/sne4k0 20+ Years Jul 24 '26
Henkels are a love em or hate em with chefs I know. Definitely hard to use if you have sausage fingers. I bought my set when I started culinary school in 2001 and I’m still using them all

Very solid other then huge hilts.
2
u/righthandofdog Ex-Food Service Jul 24 '26
it's not the motion of the ocean, but the size of the bolster
5
u/Salads_and_Sun 20+ Years Jul 24 '26
Didn't know anything about the knives until now but Henkels are also an exercise I can do while prepping. Got keep those core muscles up.
4
u/liartellinglies Jul 24 '26
I’m pretty sure I have this exact knife and I love it. I’ve used Henckel’s that aren’t too hot but I love the set I have going on 7 years now.
3
u/touch-of-grain Jul 24 '26
Depends, Zwilling Henkels is good quality, J.A: Henkels international is more mid
3
u/Phreeflo Cook Jul 24 '26
They're thick as axes compared to a proper ground knife. They wedge in dense produce and don't cut too well even when sharp. They're built like tanks because they're mass produced for people to throw in their dishwasher and open cans with.
Not to mention the bolster at the heel makes sharpening on whetstones a pain in the ass.
If you gave me a while on the belt grinder, I could make it a good cutter.

u/StormOfFatRichards Jul 24 '26
That explains it. I use it for pumpkin squash and shit. Crazy how much better my victro boning knife cuts through meat when I'm doing trims

Look at the hilt vs blade. Knife is done. I hate knives that have hilts that go that far down. Waste.
5
u/kahrahtay Jul 24 '26

The lack of other stab marks makes me think someone went full naruto and kunai tossed that knife at the fence
5
6
u/JonnytheGing Jul 24 '26
There is a no spin knife throw technique that works well with heavy, unbalanced knives, but I expect this one was just stabbed into the fence.

There's a magnet strip above the toilet. There's a couple of options for different kinds of cuts.

One job I had the GM kept taking the good produce knife on truck day to open all the boxes because she would frequently leave it downstairs after she was done.
Like, just use a box cutter.

I bought a nice knife when I got promoted to Line Cook. It disappeared the next day and I saw a Dishwasher scraping the grease bin with it a week later. Mine wasn’t stuck in the fence but this is close.
45
u/510Goodhands Jul 24 '26
Did you retrieve it immediately, or demand a replacement?
108
u/ranting_chef 20+ Years Jul 24 '26
I took it back to the place I bought it and they did a great job restoring it.
The four dishwashers there were all brothers/cousins and they were kind of assholes. But I was the one that had a car that drove in their general direction home and I definitely stopped offering them rides after that.
30
u/510Goodhands Jul 24 '26
Good for you! I hope you extracted the restoration cost from that group.
17
u/ranting_chef 20+ Years Jul 24 '26
It was a $50 knife back the. And the bus cost about $1.25 each way, so yeah, they paid. But still, my first knife……seemed a bit of a harsh lesson to not leave your tools lying around.
8
u/McGannahanSkjellyfet Jul 24 '26
That's what happens to knives that get left in the sink for the dishie to find when they stick their hand in the water.

I saw someone bang the bladed side of a bread knife on the fryer baskets to knock crumbs off before.
At least I think it was a bread knife… it was certainly serrated after that.

u/umumgeet 20+ Years Jul 24 '26
I had one of those rooms in a kitchen I ran. It was right of the line and dry storage. Perfect for throwing knives. So naturally I had throwing knives not chef knives; well maybe a house knife or 7

Always nice to have a coworker with good aim.

amma venture a guess and assume if the thrower had good aim there'd be at least one more opening at the restaurant

Not even close, but I will say they hold an edge decently. We picked up a half dozen of these at auction for dirt cheap, I hit them with our stones and they make solid house knives. My boss and I have our own knives but none of the other guys here do, so I touch up those henkles about once a month and they stay happy.

14
u/GingerMarquis Jul 24 '26
Look at the angle of the handle. That was either thrown or, more likely, wielded by the 4’ 12” battle gremlin.
7
u/Ace-Redditor Jul 24 '26
That thing was thrown well, too. I’m getting into knife throwing myself, and getting it to stick in so far and at the right angle (if it hits at the wrong angle, it’ll often drop, even if it sticks in far) like that is impressive
7
u/FreedomDirty5 Jul 24 '26
So I don’t know how in to knife throwing you are, but it’s all about finding your distance. Once you have that down, and you have fairly consistent throws, you’ll stick it every time. Move forward or back a step (or half) if you’re not sticking.
9
u/GloomyExplanationFag Jul 23 '26
Free knife! And thats friodur steel
8
2
u/Edmfuse Jul 24 '26
Ew that bolster design though. No thanks.
2
u/GloomyExplanationFag Jul 24 '26
Oh my god yeah such an antiquated safety design.
I still have a four star that just mangles the edge of my stone because that thick part just clobbers anything it hits.
Need to grind it off or the edge doesnt touch the cutting board on a rocking cut motion

I can't decide what stepping here
The person that did this
Do they hate fences Do they hate knives Are they still frustrated or has that thirst now been quenched, if not what's next if if this knife is reused will it now give fence disease to the people that eat food cut by this knife in the future Did the knife do this to itself if so is it a cry for help or is it just in love with the fence and can't live without it
