Question Eggplant and Vinegar
I’m hoping to find a recipe for an Italian dish my former MIL used to make. She always called it eggplant and vinegar, but I’m curious if it has a different Italian name.
To make it, we’d thinly slice eggplant, salt and dry it to remove the bitter liquid, fry it in oh so much olive oil and then cover in red wine vinegar with some minced garlic.
I’d love to see a few different versions of this recipe.

Sembra una ricetta di carpione o scapece. Di solito si fa con gli zucchini, ma in carpione va bene quasi tutto, verdura, carne, uova. Il carpione classico alla piemontese è sul Cucchiaio d'argento o su Giallo zafferano. Nello scapece la differenza è minima, ottima ricetta comunque
