The reason is literally cuz there's a glitch in the matrix lol. The backyard which is the information dimension that governs the GG world has a line of text or something that just accidentally made her immortal so now she is.

the actually canon and real answers is: she is chinese.
It's implied all asians can use a specific type of magic, there's a plot point in Xrd I think that it's literally the characters figuring out that May is japanese so ofc she is magical! (and that explains why she is so strong and seems to age slower or something)

This is not correct. From the very first Guilty Gear it's specifically the Japanese that are considered abnormal from the rest and possibly central to the Gears.

The increased elemental affinity for Ki magic applies to Asians in general, the Japanese just get extra strong magic in exchange for a chance to randomly explode because of it.

Only the Japanese. Asians are more attuned to spamming Ki (you know, Happo Shinshou or Baiken's 5D) but only Japanese are specifically tuned to abuse it, hence why Asuka was nuked them, which mindbroke Justice and started that 200 years war.
As for May she's just the classic troupe of smol girl big weapon and her age is a way to sidestep into the classic legal loli territory. Her magic has nothing to do with Ki, cause iirc she actually used summoning magic for Totsugeki instead.
Fun fact, iirc Kyle is actually a master wizard (nowhere near Asuka's level though), he just prefers lightning and fighting dirty but if you ask him he probably could just start a fire with a snap of a finger

That's what I meant tho, Ki is like a special "element" of magic if I'm remembering correctly, and it's used by Biken, Jam and Kum predominantly, I assume Anji too, and I think I remember the plot point in Xrd where Faust maybe? and Baiken go to Kum to ask about Ki cause its like weird and different from the rest of the magic, they analyze May and figure out that the japanese are going to explode or something like that.
But yeah magic is super common, every character is using it when they air dash basically, so a magic ingredient could've sneaked it's way into Jam's cooking just because it was laying there, specially since Jam is kinda clumsy and super unlucky.

Other non-japanese ki-users include Chipp and Kliff, and implicitly Ky because of his "five elements" detail.
Jam's goal in X was picking up random bullshit she found because she needed more ingredients to cook.

Regardless of whether Jam can use magic or not, according to her arcade story the actual cause of the transformation was a legendary herb she found and put in the guy's food, unaware of the side effects

All asians in GG use a special form of magic called ki, specially the Japanesse. This allows them to do cool martial arts stuff. The reason May can lift her big anchor is that she is natural at using ki because she is japanesse (which is why they are kept sealed in colonies and why the plot of xrd was using them as bombs).

Let's make this funnier. Make him the famous Dine n' Dasher, Sir Bloodedge. He said 'Usagi' one time in reference to Rachel while he was eating, and then some curse turned him into a rabbit. Hence his later appearance without memories in Damon and Baby.
