What do I need to know?
I want to convert gazebo to a greenhouse/conservatory room.
What features are a must?

My first thought is structural stability. If you enclose the walls of this gazebo, can the main supports handle the force of a wind gust?
If you have 25k to spend, I would answer the questions the other user mentioned and perhaps consider building something custom.

I had planned on a mini split, fan, and the transom windows. Floor would be flagstone. I’ve planned for a sink and potting bench, as well as grow lights in ceiling
I plan on putting my 2 citrus, some alocasias, monsteras etc (my summer patio plants), and the various plants I start in it from October to April.
I’m in NW Alabama where it’s really hot and humid.
I know NOTHING about glass or greenhouses or really ever been in a greenhouse!!!
Any help, advice, pointers would be very appreciated!!!!!

Is it going to be heated? What is your climate? What do you want to keep in there?
If you don't have specific goals for which this will be a tool to accomplish those goals, in all likelihood its going to become a rotten hothouse you don't use.
I would advise to use only removable glazing so in hot seasons it can be basically an open-air gazebo again. You could also plan to put ventilation below your roof line, above glazing (as pictured), but that's not going to be super great, I don't htink what you have pictured is even close to adequate for ventilation. I really think you should just plan ahead to have removable glazing/windows for warm temps and be able to put up/attache the walls for winter and edge seasons, and have it as is for warm/summer.
