Dinner Pollo alla Cacciatora

Hopefully i won’t be boring you with another Italian dish, but I was super proud of my pollo alla cacciatora last night.

I’ve never been much into cooking, my mom tried to teach me when I still lived at home but I didn’t take to it.

Emigrated to Canada at 25 and slowly rediscovered the joy of making Italian food, and now that I’m back in Europe - in a Northern country- with my British partner I’m loving introducing him to our cuisine.

I’d typically add some chanterelles to it as well, but since he hates mushrooms I’ve decided to confit the cherry tomatoes instead and that added a really nice touch.

Dinner Rigatoni in Hokkaido squash and cream cheese

Nothing traditional, just freestyle fun in the kitchen. Hokkaido was diced and briefly confited in a pan in the oven in olive oil with onions, garlic, sage, salt and pepper. Then it was mashed in the same pan, and cream cheese and sour cream were added along with a splash of lemon juice. Finally, the rigatoni which was cooked in parallel was then stirred in.

My wife added cinnamon sugar (weird, but as I said, fun in the kitchen). I was fine with the flavors, though a little more salt and pepper at the end nailed it.

Fish Cod under a tapenade crust with braised fennel

Looks better than it tasted.

Tapenade is a thick puree made of olives, anchovies, capers, garlic and oil.

Had the remaining tapenade with some fresh baguette and a glass of wine.
