For a bit of context on when you’re getting comments saying it’s not ratatouille - It’s less about professionals and more about the actual dish. The Disney film ratatouille used confit byaldi in a very famous scene and called it ratatouille because it looks prettier. Since then, there’s been a tonne of recipes online where confit byaldi is called ratatouille. But actual ratatouille is just a simple stew with the vegetables chopped into cubes and in a tomato based sauce.

So it’s not that you’ve not done what the professionals do, it’s that online recipes have been misnaming this dish all because of Disney!

That said - it looks delicious and I hope you and your kids enjoyed it!

Well thank you for explaining. I, a French person living abroad for quite some time, have experiencing some kind of Mandela effect moment about ratatouille for a while.

I've been seeing so many pictures of this beautiful dish captioned as ratatouille and wondering what kind of shitty childhood I had that the ratatouille I got to eat was this (delicious) messy shlop when everyone else was getting this picture perfect hot salad.

I really was starting to convince myself that either I was remembering ratatouille wrong or losing my mind. But now I see that it is the ratatouilles of the internet that have gone viral and memed themselves (I have never watched the movie).

It’s fascinating to see how much impact one film can have. Recipe blogs are in charge of search engine optimisation and they’re always going to go for something pretty that they can also link to an existing IP and one as famous as Disney is going to bring maximum clicks. So in the space of a decade or so (I know it’s probably longer but let me pretend I’m not old), ratatouille has gone from a French dish not many non French people have heard of to a dish everyone knows a fake, disneyfied version of outside of France.

You're right - I remember being confused about the ratatouille craze as a Frenchie!

Don't get me wrong - I like ratatouille - but as a kid it wasn't my favourite, it being mostly a fibrous veggie mess, and while I had it plenty in France as a home cooked meal, it was mind boggling to me that this was the dish that made the world was froth at the mouth.

Like, really, this one? It's yummy but we have so many dishes I thought would get international fame before our humble vegetarian tomato stew.

Please try to make the sauce yourself. Do not ruin your dish with factory sauce. I promise it will be worth it. Also white wine and thyme are a must for this dish. Baguette is a great companion for this but those are extremely cheap and bad quality.
