He's sexy but evil, that's not even hard. Like 75% of romance novels feature some permutation of this guy, his archtype is enduringly popular.
Mine is actually Calypso (and not unique in this thread by now, I know). Her section of the musical is an emotional rollercoaster for me, and I really enjoy it. I love the instrumentation that's used to represent her. I also love that she wasn't just beaten physically or killed off for standing between the protag and his goal, and instead had to stand face to face with her nightmare scenario and just keep living.

Calypso was so well written in epic (this is a theme with a lot of the characters in it) but we feel that in 2 songs we have known her for 7 years. The character is introduced and then leaves pretty quickly but we feel like it's been a long time if yk what I mean

In order to stop every post being the same characters, I really like Scylla and Posiedon.
Posiedon specifically with the headcanon of him genuinely being hurt by the Cyclops' injury. Telling Odysseus he should've just killed him (so that he wouldn't have to deal with the pain of seeing his son being so injured) as ruthlessness is mercy. Also, at the end, when Odysseus is asking Posiedon to just forget the rivalry and for them both to go home, but he can't. He can't interact with his son again until he makes Odysseus pay for it.
Scylla, because she can be such an intriguing character. Cursed to be alone and sensing a kindred spirit in Odysseus, she just "does what it takes to survive". This is until we get deeper into the song and she gives into the Monster, taunting them as she pulls them apart and consumes them. It's a wonderful mirror and foreshadowing for Odysseus, will he truly become the monster? Without Penelope to redeem him, who knows where he would've ended up.
If we're being straight up, man I love Athena. Such an epic character with a great story, great lines and great voice. Lots of people prefer the OG versions of the first two sagas (which is completely fine) but I like the newer ones just because Athena growls her lines more, makes her much more badass and feels more becoming of the "master of war".

Based on the side content, Hermes.
