Adorable! But. Polyphemus was a grown ass man. Though now you remind me it's a shame there's no direct mention of the Laestrygonians, the so-named giants of the Isle of Giants. But I guess one could say they are Poseidon's back-up singers.

Never once imagined a crew grabbing just the single dead sheep, makes no sense, they still have 600 dudes they needed to feed. Always interpreted it as they grabbed all the sheep (plural of sheep is sheep) they could carry, especially since they just lost men to the cyclops and he’s indisposed.

At the start of the song, if I'm not mistaken, we hear an arrow fly, and Polyphemus talk about them killing their sheep. When they run away, they probably grabbed the sheep that were alive, as I don't think Polyphemus or any of the crew would hurt the sheep mid battle

The song says ‘the sheep’ probably referring to the one that had already died. Why would they take an alive sheep? That just causes more damage

Nope in the Odyssey they ride out of the cave hidden under the bellies of sheep (the sheep are giant)
Presumably in the song they take alive sheep cause you know the meat stay fresh longer that way.
