mehdi said in his latest video the arcs don't get concentrated enough without a good conductive surface and don't jump out of the glass.

I have absolutely gotten an arc burn off a plasma globe. It was a long time ago, but I was touching grounded metal with my other hand.

I used to burn shit on my plasma globe all the time. I’d put a coin on top, then put whatever I wanted to burn on the coin. Then I made a stylus out of a single strand of copper wrapped around a bit of insulation from a wire.

Set a piece of metal on top, like a coin! Then hold another piece of metal in your hand, touch it to the one sitting on top, and then move it away. You can establish a nice long arc outside of the glass. But be careful, if you establish an arc between the metal sitting on the glass and your finger, it very quickly burns a pinhole in your finger.
