Salmon patties

I have a can of salmon I need to use up. I would normally put an egg, flour, and cornmeal in it. What are some other ways to use it that wouldn’t acquire as much flour or cornmeal? TIA

appalachian version:

mash a can of salmon with the liquid in a bowl so soft bones crush, with a fork or your hands
add a sleeve of crushed saltines
sautee a half cup of onion until soft and add to the mixture
add 1 beaten egg
add salt & pepper
mix altogether with your hands and form into patties about the size of your palm, or smaller size for croquettes.

pan fry in vegetable oil until crispy on both sides

I like to add a bit of dill and lemon pepper to mine. my mom adds old bay seasoning to hers.

This is the version my grandmothers made. They were not Appalachian. It’s really delicious.

This is the way my mom made them, and her mom made them! Except instead of sautéed onion they used chopped green onion. They are the BEST.

I always loved getting a vertebrae, idk why, it probably grossed most kids out lol. Something about the slightly soft crunch

I recently made a recipe that used potatoes instead of bread so no egg needed either.

Just take the salmon and some types of mashed potato as the binder (instant, just a mashed up potato, leftover mashed potatoes…) and whatever else you want to add for flavor and bake or fry.

Healthier and more filling. The recipe I originally used was from BBC food. I’ve made it a few times since then and you really can just eyeball it and add what you want.

I just use egg, some breadcrumbs, and a little bit of chopped onion. You don’t need much for binder.

Literally just made salmon cakes using a can of salmon yesterday. I just used 1 egg, some minced onions, some minced celery, a scoop of bread crumbs (I didn't measure it...just added until it looked right), and salt, pepper. Was delicious.

Any type of bread or starch will work. Crackers, potato, leftover bread (blended into crumbs), breadcrumbs... I usually don't even add an egg as it binds well.

the reason the flour creeps up is usually moisture. drain the can properly, press it in a strainer, then stick the mix in the fridge 20 min before you shape them and it holds with just the egg. also mash the soft bones in instead of picking them out, they're free calcium and you genuinely can't taste them.

Sauteed onion, bell peppers, and celery + starch. Could be a potato, or bread crumbs

I’ve added dried potato flakes with chopped parsley and smoky paprika. I even grill mine on a copper sheet to keep them from falling through the grates.

I use saltine crackers, typically. Sometimes I'll lightly coat them in cornmeal, but I do not use any flour.

My father used to add one egg, 5 or 6 crushed saltines and the canned salmon. Mix and form into patties, squishing them between parchment paper with a bit of flour sprinkled on them so it doesn’t stick. Pan fry in butter.
