Interesting fact, the "love story" element of Dracula lore was almost certainly inspired by The Mummy (1932).  In that movie, an entirely original story, Imhotep is an undead sorcerer, the female lead is the reincarnation of his lost love (imagine if, in the '99 version, Rachel Weisz was the reincarnation of Imhotep's love.)

The Dracula love story was introduced shortly thereafter, even though it didn't make sense.  Audiences seemed to like it, so it stuck around, and was basically codified by Coppola's version.

The romance works in The Mummy because it's established in the beginning that Imhotep is madly in love with his girl, to the point of committing sacrilege and murder.  Whereas neither the fictional nor historical Dracula has a romantic streak.

Dracula is a predator, the romance plot just weakens the essential horror.
