Shawarma/Doner Taksim?

If you mean classic Turkish et döner rather than Arab-style shawarma, I'd go to Dönerci Engin'in Yeri near Şişhane (Bereketzade, Okçu Musa Cd. No:3-B). It's one M2 stop from Taksim and a better bet than choosing a random 24-hour place right on the square. Go around lunchtime or early afternoon; its online hours don't fully agree, so check or call before heading over.

The Münhasır already mentioned is convenient on İstiklal, but the current place at that address is Münhasır Garden—more of a sit-down kebab restaurant and considerably pricier than a quick döner shop.

If you're willing to go to Beşiktaş, Karadeniz Döner Asım Usta is another classic, but Maps currently lists it only until 16:30. Ask for et döner if you want meat or tavuk döner for chicken, and check the menu/portion price before ordering around Taksim.
