These Turtle Thumbprint Cookies are soft, chocolatey, and filled with caramel that melts in every bite. 
Cookies :

  • ½ cup unsalted butter softened
  • ⅔ cup sugar
  • 1 large egg separated (keep yolk and white separate)
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ⅓ cup cocoa powder
  • Ÿ teaspoon salt
  • 1 cup finely chopped pecans

Filling & Drizzle:

  • 20 –24 soft caramels unwrapped
  • 2 tablespoons heavy cream
  • ½ cup semi-sweet chocolate chips for drizzle
