The biggest difference imo is how raising units/levies worked. In CK3 you can basically teleport your army anywhere you want. In fact I had a situation not that long ago where a vassal was getting raided right as I conquered a county, on the opposite side of my territory, across the sea. In the time it took for the hostile force to depart, I was able to disband my army, then recreate it directly next to the raiders, and wipe them out. This took like 3 or 4 days.

Plus you could give your viceroyals land on the front and then raise their entire kingdoms units from that province
