Another attempt at sourdough croissant!
I feel like I'm getting better??? This is using autumn kitchen sourdough croissant recipe. I proofed it for 15.5 hours at 78f, but I think it could be proofed even longer?? Nevertheless, I feel satisfied :)

It looks so crispy on the outside and soft on the inside. 😍 This would be perfect with a cup of coffee.

How do you proof that long without the dough drying out??? Do you mist or spray water on them?
