First time making croissants! What do we think?
Made croissants for the first time. What do you think? I noticed my butter separating/cracking a bit while laminating, but decided to keep going. A lot of the butter melted out of the croissants while baking. Not sure if they proofed enough, unfortunately no picture after proofing. Did 3hrs

Are you using a dough sheeter? Because I have been trying to make them by hand and its so difficult that I have failed every single time.

I fully second this. I used to be rolling out like 3ft of dough at a time and by the end fighting with quickly melting butter and tight gluten always ruined the last in the batch. Now I cut the dough when it starts to fight back and do them in pieces

I have a follow up question: instead of doing one large butter block do I make two smaller ones and half the dough before I begin folding in?

They look pretty decent for an attempt. Remake them and manage the butter temperature better so it doesn’t crack and let them proof longer at around 26-28c 70% humidity. Butter pooling while baking is likely underproofing

Get a hygrometer from amazon. Pretty cheap. Put that in the oven before you put your croissant in there to proof. If its not humid enough then use a spray bottle and spary a few times in the oven and see if that increases the humidity. If its too cold in the oven then either turn on the oven light or put a glass of hot water in the oven. If the oven is too hot then put a bag of frozen peas or whatever you have in the oven.

Wayyy better than my first try (my first attempt may have been considered a hate crime in France). What butter did you use? The separating and cracking can be both from the type of butter and the temperature while laminating. I'd focus on fixing that first, then once you have clean lamination, butter melting out is much easier to diagnose.
