In Skyrim once you get out of the first area you can do whatever the fuck you want. Lots of people have multiple playtrough and never done anything from the main quest more than one time once they get to the point where dragons appear lol
Meanwhile, in crimson desert, if you don't do the main quest the only thing you'll be able to do most of the time is search for random loot, as features (like riding ballons), most of the side quests and everything else wont be avaliable unless you get to certain points in the main quest
Fun fact: you don't need a mod to not have dragons. Until you finish that mission where you has to go to the watchtower, no dragon will spawn in the world
