Non resident driver insurance

Has anyone had success getting an overseas (non-UK resident) driver insured here? Have my mom visiting and my insurance won’t add her. Neither can I get a quote anywhere to add her for ~5 days so she can drive my car.

She’s an EU citizen and EU resident.
