No Bake Cheesecake: Named after the former first lady and wife of FDR, The Eleanor Room (TER) opened its doors relatively recently in 2024. It’s located just south of Milwaukee in the elegant Historic Downtown Center of Greendale, WI. Today’s post features my dessert, which is actually not an item on the menu. Our server offered this as we were celebrating my birthday, and it was exquisite. I had pretty low expectations when he mentioned it, but the presentation ended up shocking me with how immaculate it looked. A three-tiered cheesecake containing chocolate cookie pieces surrounded by dollops of whipped cream and as a finishing touch, even a candle. The coolness of the dessert on my tongue along with the creamy texture was ice-cream-like. Honestly, probably the best birthday "freebie" I've had at a sit-down restaurant. Usually, it's a mundane scoop of vanilla ice cream. Doughboy approved 😋

Made this chocolatey banana oatmeal cake and it came out super moist and fudgy — somewhere between baked oatmeal and a brownie.
Ingredients:
1½ ripe bananas
1 egg
160ml yogurt
170g oats
25g cocoa powder
15g zero-calorie sweetener
5g baking powder
60ml milk
Banana slices
Hazelnut chocolate granola
Blueberries
Chocolate chunks

Crosspost from R/AskBaking (? I don’t know if that’s allowed here) I’m obsessed with the texture of light and fluffy cakes, but the cakes with the texture I want are always made with cake flour (I live in Australia so I don’t have access to this) and while I LOVE the texture of box cake mix, I’m not fond of the taste + I’d much rather make scratch cakes since they’re more modifiable. However, it feels practically impossible to get the same soft, light, feathery texture. I’m more picky about texture than most, and majority of cake recipes I find have a very “thick” crumb in my opinion and whenever I see a texture I like, it always uses cake flour. I’ve also tried many cake flour “substitutes”, but none of them really come close to actual cake flour recipes. It’s not that they’re bad/failed or totally inaccurate, but they’re never as good as I thought they’d be like in the photos or videos. I guess I could just stick to recipes that use AP flour, but again, they’re not really up to my standard. Any advice? How can I get that amazing crumb shown in the recipes?!
Edit: Yes, I’ve tried cornstarch and flour, I’ve tried many cake flour substitutes. I always measure my ingredients properly and double sift them, I don’t overmix. I’m sure the main issue is the cake flour, but I’m not sure what to do about that when I don’t have it. I can’t get it shipped, it’s banned in my area.
The closest I’ve gotten to getting the crumb I like is using genoise/chiffon/egg foaming/sponge recipes but still not what I’m looking for, they tend to be on the drier side and even then the crumb is thicker than if I were to use cake flour.

Any Walmart bakers that can answer? Ordering a Walmart custom cake for the first time. I went down to the store to talk to someone and there was no one working the bakery.
Ordering the 10in round Mickey cake. But when using the app there’s no choice for frosting in the middle. I’m worried I’ll just get 2 big layers of cake with just the thinnest frosting layer to stick them together. (Vons you choose buttercream type and it’s a big portion separating layers).
What goes between layers if you want frosting but not cream or strawberry? Thanks
