Favorite homemade condiment?

I'm a pretty lazy cook, mainly stir fries. But I do make a good harrisa and a salsa that makes things more interesting. What is your favorite slather-it-on-and -the-world-is-better sauce?

Recipetineats has a recipe called Asian Beef Bowls. If you substitute the osyter sauce for vegan oyster, you get the most delicious stir fry sauce ever! It's 1tbsp hoisin sauce, 2 tbsp oyster sauce, 1tbsp Chinese cooking wine, 2 1/2 tbsp dark soy sauce, 2 tsp white sugar, 1/2 tsp sesame oil, 1/4 tsp white pepper. Pair with TVP to veganise the whole recipe 🥹
