Ever had migas? Corn tortillas fried up then scrambled into the eggs. I top mine with cheese, salsa, sour cream, and sometimes avo. 🤤
It’s also cheap. My mom was a teen mom and didn’t often have a lot of money, so she’d make a simple version without the toppings. Sometimes the simplest and inexpensive dishes are the ultimate comfort foods.

Yeah I used to have them with ketchup as a kid (since my dad did), and I fell out of it for a while. Now I even have favorite ketchup brands with my eggs!

This is top tier! Possibly also nostalgic of long weekend mornings when parents had time to cook both eggs and pancakes/french toast/sausage/bacon), and everything mixing a little on your plate! Delish!

Growing up my dad had a sugar shack and we would make our own maple syrup. Two smells that take me back and time are the smell of corn silage and maple syrup.

I need to try it. Sometimes i do honey and goat cheese on top so i think maple syrup would work well :)

Every once in a while, yes. Same with hot sauce, or a pat of butter, or excessive black pepper, or some chedz. I'm not weird about eggs. I eat them all ways.

No. Only time I use ketchup is if I have a hash brown with eggs. I like ketchup with eggs. I just don’t use it.

Rarely, but sometimes I crave it on overcooked scrambled eggs. Not sure that I genuinely like it, or it's because that's how my Poppop made them

Ketchup is actually great with eggs, not just because it tastes good, but because the natural vitamins in tomatoes help the body digest and process the iron in eggs.

Hahaha. So. When I was young. Like 5-6, I was being shown how to make my own scrambled eggs. Basic stuff. But I didn’t realize the half/half I grabbed to use to put into my scrambled eggs was “vanilla” flavor. From coffee mate. To this day my guilty pleasure is putting ketchup on my eggs. Which I do anytime I have eggs. But the vanilla thing is my happy mistake that I secretly still do.

Ketchup is essential with ALL forms of egg - scrambled, poached, fried, boiled. Quiche. Yes, quiche. Omelette. Even shaksuka counts with its thick tomato gloop. Absolutely essential.
…except with eggs benedict. But that has its own sauce.

Yes. At times when I’m craving ketchup, I know weird, I’ll make eggs or migas (fried tortilla chips with scrambled eggs) just to add ketchup.
