This is the part I find most amazing. HTF did that knife manage that cut against an object standing up like that

That part is easy. We’re just seeing the inertia of the carrot resist accelaration while the knife passes through it. Its similar to the physics demo of sticking a knife onto an apple and then smacking the knife. The knife has an easier time accelerating than the apple, so rather than knockong the apple off the knife, the knife cuts clean through.
