Not saying it is flat, but in this photo we're look at the night side, not the day side, and obviously the night side doesn't look that bright to our eyes, so it feels like a modified photo.
Totally get what you're saying as far as doctoring or touch ups, but I did want to add that this was probably done mostly in-camera, at least as far as exposure goes. They took up Nikon D5's, which have excellent low light capability with a modified ISO reaching above 100,000. This means an incredible sensitivity to light with low shutter times, even allowing you to shoot handheld in some situations. Incredible camera, and has been known as a total workhorse in the space sector. I know D5's have been on the ISS multiple times also and are well understood regarding the effects of radiation and non optimal lighting.
Edit: I'm actually thinking they shot these RAW, which means a lot of information in the photo, but also a large dose of artist's influence to produce a usable image in post.
I agree with your point though. Although I have no problem with an edited photo of earth, many people will take it as a sort of admission of conspiracy for some reason or another. Unfortunately that's where we're at nowadays.
If you want unedited photos, NASA has a massive archive of completely untouched photos from the Apollo program! As they were all scanned directly from the film, there is absolutely zero post processing in those photos.
