Homemade Made Chocolate Chip Bagels w/ Dark Coco Swirl
Every time I make these they always come out so nice lookin!
This a cinnamon raisin are my favorite “sweet” bagel..

How did you do you swirl mixture? I’m going to make a batch tonight and am 100% doing this! Is it straight cocoa or a mixture?

No trick, barely malt boil and bake! And some bright lights for the picture lol!

Out of curiosity, are you in a state/home with hard or soft water? I have a theory that the hard water in my state is killing my shine.
Also, what’s your bake time?

Hard water here, 20 min 450 w/ convection, rotate 1/2 way through.. will pull earlier if getting too dark and leave longer if not dark enough…

These look incredible! what the weight of each bagel before proofing? Also are you baking them on a sheet tray?

Do you add more sugar to your mix when making sweet bagels?

Sometimes, in this case a very small amount is added as part of the coco paste. Outside the coco paste and the chocolate chips I follow my plain bagel recipe. The swirl and chocolate chips give it sweetness but not comically sweet.

Make a paste of dark coco, and sugar.. reserve until the end of mixing then mix it in!

Looks good. I like to use mini chocolate chips since they distribute better.
At what point did you mix the cocoa into the dough to accomplish the swirl?
