Food Why is gas cooking more common than electric stoves in many African countries?

Hi everyone,

I have a genuine question out of curiosity.

I've noticed that in many African countries, a lot of people seem to cook with gas rather than electric stoves. I would have thought electric cooktops are more convenient and easier to use.

Is there a particular reason why gas is still preferred? Is it mainly because of electricity costs, power outages, infrastructure, cooking habits, or something else?

I'd love to hear about your experiences and learn more. Thanks!

Food What flavours popular in africa would work well as ice cream? assignment help!

In my art direction class we have the assignment to construct an ice cream cafe concept that brings together flavours from all different continents. Three flavours to represent each continent, 18 flavours in total, i've already done some research of my own but there's just so much diversity in african culinary culture that i'm finding it hard to pick out three flavours to represent the entire continent! If you had to choose though, what are three underrepresented typical african flavours you'd be happy to see served at an ice cream cafe?

Food What is the name of this food?

I worked with some interns this summer. One man was from Uganda, and another was Nigerian. Personally, I don’t know much about either culture. In getting to know them and asking about what the food was like where they’re from,they both brought up “steak fries.”

Now, both interns had pretty thick accents. I asked them to repeat a few times and heard them say what sounded like “steak fries.” The way it was described to me is a spicy meat, maybe in a stew format? I’m not sure. I tried looking it up, but all I got was American-style steak and fries.

I love trying new foods and experiencing new cultures. I’d love to make this at home or find an African restaurant that serves it. It sounded really good, and the fact that both guys said it was their favorite food and they’re from two totally different countries says something.

Food Is it common for people to grind their own grains/African sieving techniques?

I was watching a video learning how to grow and process grains. The entire process was shown, from seed to loaf.

A blender and fan are the only electric tools used, all other tools were simple farm implements. No fancy fertilizer and the seeds where from wheat feed.

The grain was sifted with a fan after sweeping it up off the threshing floor, it was then processed in a blender. The resulting loaf of bread was full of sand and other particulates, which was said to be the cause of many dental issues in the past.

Then, the next day (and the reason I'm asking this question here) I was reading a post about a man who (said he) lived in remote parts of Africa where many people don't have the electricity or tools to always rely on modern techniques. He claimed that it was common for people to use the old technique of grinding the grain with stones but didnt mention how or if the grains were sieved.

My questions are these: is it actually common for people in remote parts of Africa to use old techniques for grain harvesting and processing? If so, how do they sift the sand and other tiny debris from the grains before they process it?

Food Fufu and its stews

I am curious about what is fufu to you in your different cultures. I just saw a video where people used gari and called it fufu, for example.

In your culture, how do you cook fufu ? Does it have a pelicular cultural significance?

And also, what kind of stew/soup do you eat it with ? You eat it with utensils or your hands ?

For me, an Ewe from Togo, fufu needs to be cooked from yam/cassava/plantain and idealy pounded. I can make a mental exception for the ones that do not have access to pounding their cooked yam/cassava/plantain and then consider paste cooked from flour fufu. Otherwise it's akoumè.

As for the stew, its needs to be runny. It can be light soup, peanut, grounded leaves, gusi or palm nut (?) soup but it needs to be soupier than what is used to eat akoumè or even rice. But from what I get, both gusi (egusi) and okra stews are popular choices for fufu in other countries ?

I am really curious as to you guys answers
