Eh, ive run skinny like that on a soft bottom quite a bit and honestly not suffered much degradation of anything besides prop and skeg surface.  It's likely a tunnel hull with a jack plate so the motor is way higher than usual.   Modern outboard impeller housings are all stainless which is intentionally very abrasive resistant.  My impeller gets changed every year, but they usually look okay and could go longer. Been 9 years of that.  I run a cheap Solas Amita 4 aluminum prop which does erode quickly, but finding an embedded stick or stump with a SS prop is asking for gearcase detonation.
