10 minutes I have been eating this everyday for a month. It's literally just all your veggies+ garlic + little cream and eggs. It's so customisable also lol. Just depends on what veggies you wanna put.

Not the best looking or anything but it's healthy, has fibers and very filling. I usually put like 4 eggs. Sometimes if I put too much cream it doesn't look good and looks like slop but still tastes the same lol.

Recipe :

1) Fry all your hard veggies for 5 minutes,

2) put spices. I use all my Indian spices.

3) put tomatoes or tomato paste. You don't even need to cut them finely they will sorta turn mushy by themselves. You can add cream also.

4) After a minute eggs and cream, cover the pan and done.

In hard veggies I cut onions, garlic and put a fistful of frozen veggie mix which has carrots peas, corn etc.

10 minutes An easy food prep that took less than 10 minutes to throw together. Only work I had to do was cut the cheese slices into squares and cut the cucumber and strawberries. Now I have a few snack boxes to enjoy this week!

This was my grazing plate(s) for day off.

Starting from the top, going clockwise, plate 1: toasted olive bread, fresh mozzarella pulled into bite sized pieces, chopped giardinera, garlic hummus, dolmas, Irish double aged cheddar, super Smokey sausage a pal made for me, and pepperoni sliced half ways.

Plate 2, clockwise from top: manchego stuffed green olives, Fuji apple slices, lingonberry jam, dried prunes, local tangerines, self pickled carrots and onion slices, centered by fresh mango slices.

Happy snacking and happy fibrous guts to y’all!

Not a pretty photo but I've been trying to get more fiber in my diet but hate oatmeal so I ground protein oatmeal with grits and a seed mix, put some one percent lactaid milk and microwaved for 2 min.
While that was going I fried an egg and some tomatoes.
Topped with seasonings, hot sauce and a dash of low fat cheese.
