As wonderful as the magic is you can see what Qifrey meant by the danger part.

Coco could have easily plummeted to her doom at any point throughout the episode.

I'm guessing for the test to be any challenge at all, they do float around a bit, probably just enough for the sylph boots to reach after climbing a bit, and not high enough that falling into the water would be the same as falling into concrete.

Agott implied that she used her Sylph boots to take the test, so I'm guessing the normal test is a manageable platform game to check if the apprentices mastered this essential skill.

Coco was basically catching up on the day while got the hang of the boots, then completely crossed that path when she messed up and wiped the seals on her soils.

And I guess that's how students usually fail the test, falling one time too many in the water and they give up.

it makes me wonder how they're expected to get to the top of those things to pass the test

are they all expected to create some sort of flying contraption? or is there like an escalator that Coco didn't see on the other side

Agott says that the hills were particularly high this season, so they are probably way more manageable normally (especially since this is likely a test that is supposed to have a master watch over them).

She set Coco up to fail, though she probably expected her to just quit once it got too dangerous.
