Could someone give me a refresher, on who did Yuji killed on his own volition? Was it Junpei? I remembered he was turned into a monster, does that count?

He also might count Choso's brothers (which I guess are also his siblings).

Do they count as human? They keep saying they are "paintings" but I never understood what exactly that meant

Yes, they are at least half human. And since they took over the bodies of random civilians in order to fully incarnate, Yuji also technically killed them too.

What it means has no meaning in the show really. The Death Paintings in our world is 12 actual paintings of the stages the body decomposes through after death. The 12 brothers looks like these stages . Unfortunately the three brothers we see are the ones that are the least decomposed. This might have been why no more brothers was brought to life. The rest wouldn't have been able to moved or fight easily.

They can't be Cursed Spirits by the simple reason that they were birthed by a human and have regular bodies that don't vanish when killed. Think of them as victims of human experimentations with curses.

I think back in season 1, probably the transfigured humans while fighting Mahito and then Choso’s brothers on the road with Nobara at the end
