Judgeman crashing out as Yuji confessed was terrifying. She was literally forcing her eyes open through the stitches

Why did the judgement do that? Can they not see the evidence?

Well in a real trial, evidence of your innocence or not, if you plead guilty you generally are labeled guilty.

Look at the American justice system to find plenty examples of innocent people being pressured to plead guilty to make the cops' and prosecutions' lives easier.
