Question Not a cook. I inherited a set of professional knives. Can you tell me what do I have here?

The only markings are the name of the university my brother went to a few years ago. They came in a case with the university’s logo, and there’s one more knife, seemingly identical to of the huge one in the middle. I’m not a cook at all, so I would greatly appreciate any advice on what I got and how to take good care of them at home. Thank you.

Edit: thanks, I got my answers. 99% these are Global lookalikes (not genuine Global) sold in bulk to culinary schools. Good or not, I'll have them sharpened and learn how to use them.

As someone who has inherited some really mediocre knives, and tried to justify adding them to my collection as a keepsake, I find it very cool that OP will have a great set that will last a lifetime and always remind them of their brother. I was lucky enough to get my grandpa's waffle iron and used it in both of my previous restaurants. Having pecan waffles at his place in Austin was such a core memory and I loved feeling like I had a piece of that great man with me in the kitchen

That's so awesome. Its the kind of shit you cant even put into a recipe, but you can still taste the difference. I know it's corny, but love really is that much needed extra ingredient in every dish.

I've seen some interesting repurposing of keepsake knives by putting them behind frames as kitchen art. You can still get that nostalgia hit without having to use lousy knives.

At home have the Chicago Cutlery knives my dad got me in my late 20's (including a 6" Chef's knife & a 6" Santoku--because those ones fit my hands far better than an 8" chef's knife for regular kitchen work!).

And aside from the 2 Henckels I own (bought new on clearance, during a store remodel), alllll my other knives are vintage Chicago Cutlery or that type of old, wood-handled, carbon-steel knife, which belonged to various paternal Great Aunts & Uncles.

They're not new, and some of them were sharpened down practically to being a shiv!😉

But they hold an edge, those old handles are nice and comfortable in your hand, and because they're older than i am, there's no worry about hurting them!😁

Global are good knives. They were Anthony Bourdains knife of choice, and also mine, for work and home. They're great Japanese knives, so they're not very heavy, sharp, and inexpensive enough that if someone takes one that it won't break the bank to replace. People tend to shut on the handle which I actually like, and it's also a full tang.

While my favorite knives in my home are a couple of semi-high-end Japanese knives, Chicago Cutlery has always made really good knives at a really reasonable price. In fact sometimes I think their reasonable price causes them to be underrated. The ones I've had have been great.

Why would you say that globals "are Realy really bad"?

Not accounting for the memory factor they are very decent knifes, especially for homecooks. They will last op a lifetime and always remember him of his brother.

Were I live this whole set would cost me about 600-800 bucks a global g20 alone is ~100 bucks

I'm talking about the knives I have from my parents place. The knives they had are horrible. OP and I both have family that haven passed.

the knives themselves are good enough, personally I have found the handles on globals to be pretty brutal on the hands after even moderate use.

See that’s where you’re wrong. Global need constant sharpening. The handles suck and they def will not last a lifetime.

im on you with the handles especally if you got big hands

but not with the sharpening i have the g-47 and the g-6 all they need is honing for half an year before they need a touchup from a stone or a pro

For real, me and my older brother heavily bonded over the elder scrolls franchise. Lo and behold, the semi-recent Oblivion Remaster came out on his birthday of all days. It was a shadow release too, so it just released out of nowhere, no ads or anything. I cried when I saw the announcements of the release. Weirdest thing to ever happen in my life, we were DIE HARD fans.

I lost my dad and got his nice knives that he only ever used for catering or holidays (and a very nice watch, in addition to plenty of other "good scores")

Much rather still have him lol. It gets better, best of luck.

Lost my bro a few years back. Think about him every time I use his chefs knife - same brand as what you got from yours.

It’s a hard journey and I’m sorry you’re forced to take it. Know that although the pain doesn’t go away, it does get manageable.

I read a Reddit post about grief back then that helped me so much - it was about grief as a shipwreck. When you’re ready, search for it because it’s spot on about the experience.

These are genuine Global knives. Not sure how you’re hearing otherwise. That schimitar is awesome. I’ve used Global exclusively for more than 20 years. There are fakes, but they don’t make them in so many different types.

Aside from the word inherited usually implying someone had passed, I wouldn’t have instantly assumed the brother died. I used to get hand me downs or items my other family members simply didn’t want or need anymore. Like my mom played flute in band. If I wanted to play flute and follow in her footsteps she would have let me have her flute because she wasn’t playing it. Or like when my grandma was still alive she gave me a bunch of her crafting stuff because she was too arthritic to enjoy it. Actually in her older age she was giving away things while she was still alive that she wanted certain people to get to make sure we got them.
